Chicken and Shrimp Gumbo With Cauliflower Rice

The other day, I was out and about and just thought, "Hey, I want Gumbo!"  The funny thing about that is, I have never even really ever thought about Gumbo.  It was never on the list of my Top 100 Foods that I would want to eat on a weekly or even a monthly basis.  After finding this Paleo recipe and changing it more to my tastes, however, I can now say- "I love Gumbo!"  It has also become one of my husband's favorites, though, he still wants to add the grain rice to the cauliflower rice.  One day, I will convert him!!!


  • In a saute pan, cook diced chicken on High in 1 Tbsp bacon fat or oil for 5 minutes.  Add sausage and cook until chicken is cooked through.  Turn off heat and put meat to the side.
  • Place a large sauce pan over medium heat.  Cook onios, celery and peppers in 2 Tbsp fat or oil until onions become translucent.
  • Add garlic, tomato paste and tapioca starch.  Mix until all vegetables are coated with tomato paste and starch and tomato paste starts to darken (about 4 minutes).
  • Add all herbs and spices except for Bay Leaves, and mix thoroughly. 
  • While whisking the vegetables, slowly add chicken stock and then fish stock.
  • Add Bay Leaves and turn heat down to low and let simmer for 20 minutes.
  • Turn heat back up to medium and add chicken, sausage, shrimp and lobster.  Mix thoroughly.  Allow the shrimp and lobster to cook through and immediately serve with Cauliflower Rice.  Bacon bits and parsley can be added as garnish.

Cauliflower Rice:

  • Place cauliflower florets into a food processor and pulse until cauliflower is the consitancy of rice.  
  • Add fat or oil to a sauce pan- medium heat.  Throw in cauliflower and cook for about five minutes.  
  • Add garlic, broth and salt and pepper and stir.
  • Turn heat down to low.  Allow cauliflower to simmer for about 10 minutes.  Serve on top of Gumbo.


  • 3 Tbsp coconut oil, almond oil or bacon fat
  • 2 Chicken breasts, small diced
  • 4 Andiouille Chicken Sausage, sliced
  • 1 yelow onion, small diced
  • 1 cup celery, small diced
  • 1/2 red bell pepper, small diced
  • 1/2 orange pepper, small diced
  • 1 chili pepper, seeded, deveined and tiny diced
  • 5 garlic cloves, minced
  • 2 Tbsp Tomato Paste
  • 4 Tbsp tapioca starch
  • 2 tsp ground paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp red pepper flakes
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3 cups chicken stock- warmed
  • 3 cups fish stock - warmed
  • 3 Bay leaves
  • salt and pepper to taste
  • 1 pound raw shrimp, peeled and deveined
  • 1/2 pound lobster tail, small diced
  • Bacon bits and parsley for garnish

Cauliflower Rice
  • 1 Tbsp bacon fat or oil
  • florets from one head of cauliflower
  • 1/2 cup vegetable broth
  • 1 garlic glove, minced
  • salt and pepper to taste
